Recently I have discovered a variety of apple that I didn't know about before - the Pacific Rose. This is a larger variety with a coloring that is predominatly pink with some yellow thrown in for good measure. The flesh is firm and crisp, and the flavor is sweet and mild, with no discernable tartness or sharpness. This is a very smooth apple, and I highly recommend it. The Honeycrisp is still my all-time favorite apple, but the Pacific Rose is a close second, and in-season Golden Delicious a close third. I have also discovered that apples are best when kept un-refrigerated. They will last quite a while at room temperature. Refrigerating apples tends to (in my observations) rob their flesh of firmness and crispness and flavor.
